Fajitas

Fajitas are thin strips of meat cooked with thin strips of peppers and onions. The spanish word faja means strip or belt. I love anything cooked on a grill or in this case cooked with the grill’s best replacement-cast iron pan. The meat is charred and done, the veggies are cooked to tender.

In our Sauce Goddess version, we use either our Pollo Asado or Carne Asada as the meat. You can also use shrimp or slices of veggies only.

Fatjitas are a flavorful southwest dish with strips of meat and peppers and onions. Latin heat is the perfect spice to make this dish really pop.

Fajitas

Ingredients

  • 1 sweet onion, sliced thin
  • 1 red bell pepper, sliced thin
  • 1 green chili pepper (Poblano, Anaheim, or Hatch), sliced thin
  • 1 lime, cut into 8 wedges
  • Vegetable oil
  • 1 tsp Sauce Goddess Latin Heat spices

  • 1 lb [Pollo Asado|https://saucegoddess.live/fresh-mexican-pollo-asado]
  • 1 lb [Carne Asada|https://saucegoddess.live/carne-asada/]

Directions

  1. Heat a cast iron pan or heavy skillet on medium high.
  2. Add oil.
  3. Add carne asada, cook until done.
  4. Remove and hold on a hot plate.
  5. Add more oil and cook pollo asado until it is done.
  6. Remove chicken from the pan.
  7. Add last bit of oil and the peppers and onions.
  8. Cook until barely tender.
  9. Serve with warm tortillas and any of the toppings listed below.
  10. Make it a meal by serving -
  11. Summer squashed grilled with Latin Heat spices
  12. Refried Beans
  13. Warm Tortillas (corn or flour)
  14. Fresh Cilantro (chopped)
  15. Sour Cream
